Cook apples on low heat with a little water on the bottom. You can use any cooking apples for this - it’s also fun to use a ‘blend’. I do this in my large crock pot, it stand less of a chance of burning that way. Put through food mill and add sugar to taste (usually 1 cup per large bowl full) , butter and cinnamon.

Note - Suzanne (my nephew's wife) swears by 1/2 macintosh and 1/2 granny smith apples. I usually use all macintosh but 2007 I used 1/2 cortland and 1/2 winesap and everyone raved about it at thanksgiving dinner.
