2 lbs liver (I use baby calf's liver)
flour, for coating
½ LB bacon, cooked
4 onions, sliced
4 TBSP butter
|
Put butter & onions in large skillet. Cook over low heat 7 minutes. Coat liver with flour. Push onions to one side, and put the liver in the pan. Cook till well done on both sides (about 20 minutes). Break up the bacon and add just before serving.
