Nuke potato on high 4 minutes. While still hot, take out of jacket and mash. Add vanilla, butter, and mix well with fork. Add box of 10x. mix with fork till real firm. If too much dry, add small amount of milk. If too wet, add more 10x. Roll till ½” thick. Spread peanut butter inside. Roll like pinwheel. Slice.
