Peach Cobbler

3 cups sweetened fresh peaches
2 tea grated lemon peel
3 TBSP lemon juice
2 TBSP quick cooking tapioca
1 ½ cups enriched flour
2 tea baking powder
¼ tea salt
1/3 cup butter
1 beaten egg
1/3 cup milk
¾ cup sugar
½ cup water
2 TBSP butter

Put peaches in bottom of 2 quart casserole dish. Sprinkle with lemon peel, juice, and tapioca. Sift together flour, powder, salt. Cut in butter to form coarse crumbs. Combine egg and milk. Stir in flour mixture and mix till moistened. Spoon over peaches. Bring sugar, water and butter to boil. Pour immediately over batter.
Bake 375 45 minutes.
