1/4 lb butter
1 1/2 cup powdered sugar
3 egg yolks (save the whites!!!)
1 lemon (juice and rind)
2 packages of ladyfinger pastries
Cool Whip
nuts and/or toasted coconut (optional)

Cream butter, add sugar and egg yolks. Add lemon juice and grated rind. Beat egg whites till stiff. Fold into the mixture. Next fold a large container of Cool Whip
into mixture. Use 9x13 pan or serving dish. Place split Ladyfinger pastries on the bottom. Alternate with mixture. You will use almost all of the Ladyfingers. Top with nuts and/or toasted
coconut. Chill overnight in fridge.
