Coconut Cream Pie

3/4 cup sugar
3 TBSP cornstarch
dash salt
2 cups whole milk
3 egg yolks
1 tea vanilla extract
1/4 tea almond extract
1 cup fresh grated coconut
baked pie shell

In heavy saucepan conbine sugar, cornstarch and salt. Gradually stire in milk till smooth. Over medium heat bring to boiling, stir occasionally.
Boil 1 minute until thick and shiny. Quickly stir hot mixture into egg yolks. Pour into hot mixture. Stir to blend. Return to heat and cook over low heat 3 minuts, stirring occasionally.
Add coconut. Pour into shell. Beat egg whites until stiff, adding 2 TBSP sugar and 1/4 tea cream of tartar before beating. Bake at 350 degrees for about 15 minutes or until golden brown.
